Running your own business means time is super precious and so it’s really easy to grab convenience food on the go. Some days its like caffeine – sugar – caffeine – sugar – caffeine… So ive started to set time aside on a Sunday to plan meals for the week ahead and make some healthy treats. I am loving these coconut bites and you can just pop them into a brown paper bag and keep them in the car (or van in my case!)
I didn’t exactly measure when it came to making these treats if I’m totally honest. Instead I worked with what looked right through adding bits here and there until I arrived at a sticky mixture that would roll well. It’s key that the mixture isn’t too dry to stick together when you need to roll it into the circular shapes.
What’s In The Mix:
dates pitted and soaked overnight (approx. 2 cups)
1 large handful of chopped dried apricots
1 large handful of chopped hazelnuts
1 large handful of hemp seeds
1 large handful of flaxseed
2 tbsp nut butter of choice
1 tbsp of coconut oil
Combine all the the ingredients, make into little balls and then roll them in a bowl of desiccated coconut and put them in your fridge to set. And that’s it! Enjoy.
