Chai Spiced Biscuits

Despite this not being the first winter I have lived through, yet again I found myself thinking that after Christmas the miserable weather would start easing off and things would be looking brighter. But no, January was accompanied by floods, storms and more of the same drizzly weather as December. This is why we need cosy chai spices in our lives, today this comes in the form of Chai Spiced Biscuits. Baby, It’s Cold Outside *Tea was made for cold winter months, our blend of ginger, cinnamon, cloves, cardamom and nutmeg gives a warming flavour as well as some digestive and anti-inflammatory health properties.

These Chai Spiced Biscuits are wonderfully soft and chewy and will go perfectly with a cup of hot TeaShed tea (but don’t dunk for too long). You should really wait for them to cool before tucking in, but they are lush when fresh out the oven so a sneaky one can be forgiven! This recipe for Chai Spiced Biscuits is reasonably quick to make and doesn’t require lots of fancy ingredients which is always a plus. You get the chai taste and aroma by grinding the contents of Baby, It’s Cold Outside Chai teabags until it forms a coarse powder. Not too fine otherwise you’ll miss out on bursts of the spicy flavours. The dough is very soft and unlike shortbread dough it can be hard to roll out and manipulate so opt for hand rolling it into balls rather than cutting out shapes with cookie cutters.

Ingredients:

225g self raising flour
110g butter or margarine
110g sugar
4 & 1/2 tbsp golden syrup
Contents of 2 Chai teabags, ground
2 tsp ground ginger

 

Directions:

1. Preheat the oven to 180 degrees C and line or grease a baking tray.
2. In a saucepan, melt the butter, sugar and syrup over a medium heat. Remove to cool once everything has melted and dissolved. Add the flour and chai spices into the pan and whisk until it forms a dough.
3. After letting the dough cool slightly, roll it into small balls and place them onto the tray. Flour your hands so the mixture doesn’t just stick and leave enough room for the biscuits to spread during baking. Press a fork onto the top of each ball to squash it a little, flour the fork if you find it sticking. This recipe will make 25-30 Chai Spiced Biscuits depending on the size.
4. Bake at 180 degrees C for 10-12 minutes until the Chai Spiced Biscuits are golden brown. Cool completely on a wire rack before serving.
